Soup: Lotus Roots

Boiled the above ingredients in a pot or crook pot for approximately 3 hours.  Since peanuts takes a longer time to soften, pre-soaked them for at least 6 hours to reduce cooking time.

    3 hours!!! That’s a long time.
    Can we cook in a pressure cooker? How long would that take?

    The Queen says:  Never rush your soup.  You should simmer them on slow fire up to 3 hours or more for better taste.  Why don’t you use a slow cooker?  If you are making peanut dessert then can use the pressure cooker.  That should take about 30 minutes to soften but it all depends on how hard is the nuts.

    jang jang, you sud substite the ground nuts with a bit of red bean 🙂

    The Queen says:  Aiks!  Never heard this before.  Must try one day.  But the soup will turn out red wor.

    I put “kei ji” too..

    The Queen says:  Sometimes I dunno what soup should put kei ji and what shouldn’t.  So I also play hantam. lol.
